But we really get excited when we discover a way to use it in a dip. 

And then we get absolutely enchanted when said dip emits a smokey-spicy combo that makes this a dip that gets a serious “wow” from anyone who tries it. Well, except maybe people that don’t like it spicy, or smokey. 

For those who like it a bit tamer or want something that’s super kid-friendly, we recommend Melissa Clark’s recipe for Cheesy Scallion dip, from which our recipe was loosely inspired. 

Our version, which incorporates generous amounts of nutty gruyere cheese, smoked paprika, and cayenne pepper, is absolutely divine with a simple cracker or some cut-up veggies.

Smokey-Spicy Cheese Dip With Shallots

Cook Time: 5 minutes
Yield: 1 cup (serves about 4 people as a nice appetizer of cocktail companion)


Ingredients

4 ounces whipped cream cheese 
2 tablespoons mayonnaise
½ of a medium-sized shallot, finely minced (about 2 tbsp worth)
¼ teaspoon kosher salt
Black pepper, to taste
½ teaspoon smoked paprika
½  teaspoon cayenne 
½ cup Gruyere cheese, finely grated
1 small garlic clove, minced

Preparation

Place all ingredients in a bowl and mix with a spoon or spatula until everything is smooth and nicely incorporated together. Taste for seasoning and add more cayenne if you want it a bit spicier.
